A personal best…

I brewed my 5 gallons of mango wit today in 4.5 hours, from heating the mash water and dragging the equipment up from the basement to pitching yeast. Would have been closer to 4 hrs 15 min if I hadn’t forgotten to sanitize the damn transfer tube for filling the carboy… DRAT! I forgot how easy and quick 5 gallon batches can be… I remember back when I was extract brewing and it took me 4-5 hours!! Good OG (1.055) so I got good efficiency… 8 lb pale, 3 lb wheat malt, 1 lb flaked oats and 1 lb flaked wheat. Wheaty….

Now I must wait for fermentation to commence and subside so I can mango it in the secondary… can you hear the tropical music playing?

    That is great. How was the 5 gallon faster? I find that 5 and 10 are virtually the same for me.

    I can’t seem to get a 10 gallon batch done in under 5.5-6 hours… and I’ve had some go as long as 7, although that was for a long (90 min) boil. I guess the biggest thing that slows them down is how frugal I am with my propane – I could heat the water alot faster if I cranked the valve open alot more, but…

    Anyhow, it is fermenting like mad downstairs. WLP410 is a slow starter, I think… took it about 12-16 hours to get going, even with a 1qt starter, servomyces, and oxygen…

    OK, slow starter and eruptive… I got home from a weekend down at VA Beach and it had blown the airlock… and I had a substantial yeast cake all over the carboy’s exterior and surrounding area… WHOA! And its still bubbling and fermenting, so I must have had ALOT of yeast in there… Next time, I’ll use a blow off tube and babysit it a little more.
